The Huasco Valley, situated in the southwest of the Atacama region, is the home of this renowned olive oil produced by a number of olive growers, located in the lands watered by the river of the same name.
The combination of the climate, soil, and water of the area, as well as a traditional system of cultivation, give this product its unique character. It is expressed in its high content of oleic acid and polyphenols, superb nutraceutical characteristics, and an intense, fruity flavor and greenish-yellow tone, elements that are highly valued among consumers.
Other characteristics of this olive oil is that it must be extra virgin and extracted by physical methods. The only variety of olive that is permitted in its production are Sevillian olives, which have been planted since the arrival of the Spanish conquistadors and are the main cultivar of the province.
